Lycopene is a carotenoid, which is a natural antioxidant with particular affinity for tissue of the prostate, breast, cervix and cardiovascular system. Tomatoes provide us with the richest source of Lycopene from nature. The carotenoids are involved in cell signalling and ensuring the integrity of all cells. They appear to have the ability to encourage natural redifferentiation; the process by which potentially cancerous cells can be turned back to normal.
An article published in The Journal of American College of Nutrition (2000) confirmed Lycopene as a potent antioxidant maintaining its antioxidant properties once ingested.
